Baked Oatmeal

What is it about snowy weather that makes you want to morph into Betty Crocker and bake everything and anything site (and then eat it...)? 
Well, anyway, a snowy morning called for some yummy amazing smelling breakfast. In a blizzard when the mood strikes you sort of have to go with what you have on hand. I ended up having (most of) the ingredients for baked oatmeal! Well interwebs, this was a huge success! I adapted a recipe from pinterest (shocking, I know). The adaptations were mainly due to missing ingredients and because I wanted to do this with as little sugar possible.  I also got to do the super chic "put your food in recycled jars" thing. Oh yes, I turned 26 feet of snow (lemons) into jars of awesome baked oatmeal (lemonade).
Okay, recipe time!

Baked Banana Oatmeal (adapted from here)

1 cup rolled oats
3/4 tsp baking powder
3/4 tsp cinnamon
1/8th(ish) of a cup of brown sugar
1 cup almond milk (I used vanilla unsweetened)
1 egg
1 tsp vanilla extract
3 bananas
sprinkling of hemp seeds and more brown sugar

1. Preheat your oven to 375º.
2. Combine the dry ingredients together in a bowl.
3. Mix the wet ingredients in another bowl.
4. Slice the bananas and put them in a sprayed baking dish
5. Pour the oats over the bananas and then pour the liquid over the oats
6. sprinkle with hemp seeds and brown sugar

Bake for 35-40 minutes or until set. It will smell amazingly! Enjoy, enjoy!

I recommend serving with some more almond milk splashed on top!

**my notes. the original recipe called for walnuts (not a huge fan) and butter (really doesn't need it) and maple syrup (it was so perfectly sweet with just a little brown sugar). But for sure, experiment with what flavors you like!
